Eric Jackson is a born and raised true Floridian. He grew up in the pizza shop his parents owned for 20 years. Jackson said he had always been fascinated with food and the logistics of it.
“I feel like it was kind of in my blood to own a restaurant,” Said Jackson.
Jackson played men’s volleyball at Lee’s McRae in North Carolina for two years and then attended the University Of Central Florida. After leaving UCF, Jackson took time to travel the world, where he truly fell in love with being a “foodie.” But it wasn’t until he spent time in Hawaii that the idea hit him.
“A few years ago I spent some time in Hawaii, surfing and fell in love with pokѐ bowls – after coming back to Florida I saw a need for it here,” said Jackson.
It took Jackson about a year to start his poke business. What began as an idea in a coffee shop in Hawaii, eventually turned into his first gig on Nov. 15, 2018. Jackson now owns a food truck along with two ‘Stoked’ locations in Port Orange and here at ONE DAYTONA. Jackson said he is excited for what 2022 has in store.
